How to Make Authentic Pork Souvlaki

  1. Soak 8 wooden skewers in water for at least 1 hour.
  2. In a large bowl, combine 1.5 lbs of cubed pork (or chicken), 1/4 cup lemon juice, 2 tablespoons red wine vinegar, 1 tablespoon dried oregano, 1 teaspoon dried thyme, 4 cloves minced garlic, 1/4 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  3. Cover and refrigerate for at least 3 hours, or preferably overnight, for maximum flavor.
