How to Make Authentic Pork Souvlaki
- Soak 8 wooden skewers in water for at least 1 hour.
- In a large bowl, combine 1.5 lbs of cubed pork (or chicken), 1/4 cup lemon juice, 2 tablespoons red wine vinegar, 1 tablespoon dried oregano, 1 teaspoon dried thyme, 4 cloves minced garlic, 1/4 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Cover and refrigerate for at least 3 hours, or preferably overnight, for maximum flavor.
- Thread 5-6 pieces of marinated meat onto each skewer.
- Preheat your grill to medium heat. Grill the skewers for 15-20 minutes, turning occasionally and brushing frequently with the remaining marinade, until the internal temperature reaches 145°F (63°C).
- Serve the souvlaki immediately in warm pita bread.
- Prepare the shredded salad: In a separate bowl, gently toss 5 cups of chopped green leaf lettuce, 1/2 cup thinly sliced red onion, 1 cup chopped tomatoes, 2 tablespoons olive oil, 1 tablespoon red wine vinegar, 1 teaspoon dried oregano, salt, and freshly ground black pepper to taste.
