How to Make Autumn Soup

  1. In a large pot or Dutch oven, brown 1 lb beef stew meat over medium-high heat. Remove beef and set aside.
  2. Add 1 large chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in 2 carrots (chopped), 2 celery stalks (chopped), and 2 cloves garlic (minced). Cook for another 3 minutes.
  4. Return the beef to the pot. Add 4 cups beef broth, 1 cup diced potatoes, 1 tsp dried thyme, 1/2 tsp dried rosemary, 1/4 tsp salt, and 1/4 tsp black pepper.
