How to Make Bacon And Potato Frittata

  1. Cook bacon in a 10-inch nonstick skillet over medium-high heat until crispy. Remove bacon with a slotted spoon and set aside, reserving 1 tablespoon of bacon grease in the skillet.
  2. Add diced potatoes and onion to the skillet with the bacon grease. Cook, stirring occasionally, until potatoes are tender, about 6-7 minutes.
  3. In a medium bowl, whisk together eggs, water, salt, and pepper.
  4. Stir in cooked bacon, broccoli, and 1/2 cup of the shredded cheese into the egg mixture.
  5. Pour the egg mixture into the skillet with the potatoes and onions.
  6. Reduce heat to medium-low. Cover and cook for 8-10 minutes, or until the eggs are set and the bottom is lightly browned.
  7. Sprinkle the remaining 1/2 cup of cheese over the top.
  8. Cover and let stand for 2-3 minutes, or until the cheese is melted and bubbly.
  9. Let cool slightly before slicing and serving. Enjoy!
