- Smoked Bacon

How to Make Bacon Jam
- Fry 1 pound of bacon in batches in a non-stick pan over medium heat until lightly browned and crispy. Remove bacon and set aside, reserving the rendered bacon fat.
- Add 1 medium yellow onion, chopped, and 2 cloves garlic, minced, to the pan with the bacon fat. Cook over medium heat until softened and translucent, about 5-7 minutes.
- Transfer the cooked bacon, onion, and garlic to a heavy-based cast iron pot or Dutch oven. Stir in 1 cup packed brown sugar, 1/2 cup apple cider vinegar, 1/4 cup maple syrup, 1 tablespoon Worcestershire sauce, 1 teaspoon smoked paprika, and 1/2 teaspoon black pepper.
- Simmer the mixture for 2 hours, adding 1/4 cup of water every 25-30 minutes and stirring occasionally to prevent sticking.
- Once the jam has thickened, remove from heat and let cool for 15-20 minutes.
- Transfer the cooled jam to a food processor. Pulse for 2-3 seconds for a chunky jam or longer for a smoother consistency.
