- 1 pound Brussels sprouts, trimmed and halved
- 4 slices bacon
- 1/2 cup chopped onion
- Fresh Mushrooms
- Chicken Broth
- 1/2 teaspoon salt

How to Make Bacon Mushroom Brussels Sprouts
- Trim and halve 1 pound Brussels sprouts.
- Place Brussels sprouts in a medium saucepan and cover with 2 cups of water.
- Bring to a boil over high heat, then reduce heat to medium-low.
- Cover and simmer for 8 minutes, or until crisp-tender.
- Drain Brussels sprouts and set aside.
- While Brussels sprouts simmer, cook 4 slices bacon in a large skillet over medium heat until crisp. Approximately 5-7 minutes.
- Remove bacon to a paper towel-lined plate to drain, reserving 2 tablespoons of bacon drippings in the skillet.
- Add 1/2 cup chopped onion and 8 ounces sliced mushrooms to the skillet with bacon drippings. Saute for 3-5 minutes, or until softened.
- Pour in 1/4 cup chicken broth, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Bring to a boil, then reduce heat to low, simmer uncovered for 3-4 minutes, or until broth is reduced by half.
- Add the cooked Brussels sprouts and crumbled bacon to the skillet. Toss to combine and heat through for 2 minutes.
