  • Flour Tortillas
  • Hass Avocadoes
  • Fresh Lemon Juice
  • Salt and pepper to taste
  • 4 slices bacon
  • 4 large eggs
  • Monterey Jack Pepper Cheese

How to Make Bacon N Egg Quesadillas

  1. Preheat oven to 200°F (93°C). Place tortillas in a single layer on a baking sheet to warm slightly.
  2. In a medium bowl, mash 2 ripe avocados with 1 tablespoon of fresh lemon juice. Season with salt and pepper to taste.
  3. Cook 4 slices bacon in a nonstick skillet over medium heat until crisp. This should take about 5-7 minutes. Remove bacon and drain on paper towels.
  4. Reserve about 2 tablespoons of bacon grease in the skillet; set aside remaining grease.
  5. Cut cooked bacon strips in half.
  6. In the same skillet, cook 2 eggs over easy per batch. Remove and set aside on a plate.
