How to Make Bacon N Egg Quesadillas
- Preheat oven to 200°F (93°C). Place tortillas in a single layer on a baking sheet to warm slightly.
- In a medium bowl, mash 2 ripe avocados with 1 tablespoon of fresh lemon juice. Season with salt and pepper to taste.
- Cook 4 slices bacon in a nonstick skillet over medium heat until crisp. This should take about 5-7 minutes. Remove bacon and drain on paper towels.
- Reserve about 2 tablespoons of bacon grease in the skillet; set aside remaining grease.
- Cut cooked bacon strips in half.
- In the same skillet, cook 2 eggs over easy per batch. Remove and set aside on a plate.
- Lay out tortillas on a work surface. Sprinkle each tortilla with 1/4 cup shredded cheddar cheese (or cheese of your choice).

- Repeat with remaining bacon grease and quesadillas.
