How to Make Chipotle Bacon Breakfast Sandwich

  1. Cook 4 slices bacon in a nonstick skillet over medium heat until crisp. Remove bacon and set aside, reserving 1 tablespoon of bacon grease.
  2. Add 1 tablespoon brown sugar, 1/2 teaspoon chipotle peppers in adobo sauce (finely chopped), and 1/4 teaspoon apple cider vinegar to the skillet.
  3. Simmer over medium heat for 1 minute, stirring constantly, until the glaze thickens slightly.
  4. Add the reserved bacon to the skillet and toss to coat in the chipotle glaze.
  5. Remove glazed bacon from skillet and set aside to keep warm.
  6. Wipe out the skillet.
  7. In a small bowl, combine 1/2 cup diced tomatoes, 1/2 ripe avocado (diced), 2 tablespoons chopped scallions, 1 tablespoon chopped cilantro, 2 tablespoons mayonnaise, 1 tablespoon lime juice, and a pinch of black pepper for the salsa.
  8. Set aside.
  9. Cook 2 large eggs in 1 tablespoon butter in the same nonstick skillet over medium heat until whites are set but yolks are still runny.
  10. Season with salt and pepper to taste.
  11. Gently break the yolks, flip the eggs, and cook for another minute.
  12. Top each egg with 1 slice of cheddar cheese (or cheese of your choice).
  13. Cover the skillet for 1 minute to melt the cheese.
  14. Arrange two strips of glazed bacon on the bottom of each kaiser roll.
  15. Add a cheese-topped egg and a generous spoonful of salsa to each roll.
  16. Top with the remaining kaiser roll halves. Enjoy!
