How to Make Baked Cod With Crunchy Lemon Herb Topping
- Preheat your oven to 450°F (232°C) and adjust the oven rack to the middle position.
- Lightly grease a rimmed baking sheet with nonstick cooking spray.
- In a medium bowl, combine 1 cup crushed low-fat crackers, 1 tablespoon chopped fresh parsley, and 1 tablespoon chopped fresh dill or basil.
- In a small bowl, whisk together 2 tablespoons light mayonnaise, 1 tablespoon chopped fresh parsley, 1 tablespoon chopped fresh dill or basil, 1 clove minced garlic, the zest and juice of 1 lemon.
- Season 2 (6-ounce) cod fillets generously with salt and pepper.
- Place the cod fillets on the prepared baking sheet, leaving about ½ inch between each.
- Brush the tops and sides of the fish with the mayonnaise mixture, then firmly press the cracker crumbs onto the mayonnaise.
- Bake for 8-15 minutes, or until the crumbs are golden brown and the fish flakes easily with a fork. If the crumbs brown too quickly before the fish is cooked, loosely tent the baking sheet with aluminum foil.
- Serve immediately with lemon wedges for squeezing.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
