How to Make Baked Cod With Crunchy Lemon Herb Topping

  1. Preheat your oven to 450°F (232°C) and adjust the oven rack to the middle position.
  2. Lightly grease a rimmed baking sheet with nonstick cooking spray.
  3. In a medium bowl, combine 1 cup crushed low-fat crackers, 1 tablespoon chopped fresh parsley, and 1 tablespoon chopped fresh dill or basil.
  4. In a small bowl, whisk together 2 tablespoons light mayonnaise, 1 tablespoon chopped fresh parsley, 1 tablespoon chopped fresh dill or basil, 1 clove minced garlic, the zest and juice of 1 lemon.
