How to Make Baked Feta Cheese With Onions Red Pepper Tomatoes

  1. Preheat oven to 220°C (425°F/Gas Mark 7).
  2. Lightly oil two individual oven-safe dishes.
  3. Remove seeds from the red bell pepper and cut into 3cm strips.
  4. Toss pepper strips with 1 tablespoon olive oil. Spread on a baking sheet and roast for 20 minutes, or until slightly charred.
  5. If desired, use a kitchen blowtorch to char the pepper skins for a more intense flavor.
  6. Set roasted peppers aside.
  7. In a saucepan, melt 2 tablespoons butter with 1 tablespoon olive oil over low heat.
  8. Thinly slice 1 medium onion (about 1 cup) and finely mince 2 cloves garlic.
  9. Add onion and garlic to the saucepan and cook until softened, about 5-7 minutes, without browning.
  10. Cut 200g feta cheese into 2cm cubes.
  11. Layer the softened onions in the prepared dishes, followed by thinly sliced tomatoes (about 1 cup) and roasted red pepper strips.
  12. Top with the feta cubes.
  13. Sprinkle generously with 2 tablespoons grated Parmesan cheese and a pinch of paprika over each dish.
  14. Cover with aluminum foil and bake for 15 minutes.
  15. Remove foil and bake for another 5-10 minutes, or until the feta is golden brown and slightly melted. Be careful not to overcook.
  16. Serve immediately with crusty bread for dipping.
