- Preheat oven to 425°F (220°C).
- In a large (4-quart) heavy pot, heat 1 tablespoon olive oil over medium-high heat. Add 1 medium onion, chopped, and 2 cloves garlic, minced. Cook, stirring, until softened, about 3 minutes.
- Add 1/2 cup dry white wine and bring to a boil. Reduce heat and simmer until reduced by half, about 3 minutes.
- Stir in 1 (28-ounce) can crushed tomatoes, 1 teaspoon dried oregano, 1/4 teaspoon red pepper flakes, and 1/2 teaspoon salt. Reduce heat to low and simmer, stirring frequently, until slightly thickened, about 8 minutes.
