  • Garlic Cloves

  • Hot Red Pepper Flakes

How to Make Baked Orzo And Shrimp

  1. Preheat oven to 425°F (220°C).
  2. In a large (4-quart) heavy pot, heat 1 tablespoon olive oil over medium-high heat. Add 1 medium onion, chopped, and 2 cloves garlic, minced. Cook, stirring, until softened, about 3 minutes.
  3. Add 1/2 cup dry white wine and bring to a boil. Reduce heat and simmer until reduced by half, about 3 minutes.
  4. Stir in 1 (28-ounce) can crushed tomatoes, 1 teaspoon dried oregano, 1/4 teaspoon red pepper flakes, and 1/2 teaspoon salt. Reduce heat to low and simmer, stirring frequently, until slightly thickened, about 8 minutes.
  5. Add 1 pound shrimp (peeled and deveined) to the sauce and simmer until cooked through, about 3 minutes.
  6. While the sauce simmers, cook 1 cup orzo pasta in a large pot of boiling salted water according to package directions until al dente. Reserve 1/2 cup of the cooking water, then drain the orzo.
  7. Return the drained orzo to the pot and toss with 1 tablespoon olive oil.
  8. Stir the shrimp sauce and reserved cooking water into the orzo. Add 1/2 cup Kalamata olives (pitted and halved) and salt and pepper to taste.
  9. Grease a 13x9 inch baking dish. Spoon half of the orzo mixture into the dish. Sprinkle with half of 4 ounces feta cheese, crumbled.
  10. Top with the remaining orzo mixture and feta cheese.
  11. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly and the pasta is heated through.
