How to Make Baked Penne With Red Pepper Sauce
- Preheat oven to 350°F (175°C).
- Spray a large skillet with cooking spray. Add 1 lb Italian sausage (removed from casings) and cook over medium heat until browned, breaking it up with a spoon. Drain off excess grease and set aside.
- In the same skillet, add 1 medium onion (chopped), 2 cloves garlic (minced), 2 medium zucchini (chopped), and 1 red bell pepper (chopped). Sauté until softened, about 5-7 minutes.
- While vegetables are cooking, roast 1 red bell pepper in a separate pan until blackened on all sides; cool. Then remove the skin, seeds, and core, and puree the roasted pepper in a blender.

- Cover the baking dish with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly and slightly browned.
