  • Fresh Mushrooms
  • 2 green onions, chopped
  • 2 tablespoons all-purpose flour
  • Fresh Parsley
  • salt and pepper to taste
  • 1 cup milk
  • Dry White Wine

How to Make Baked Salmon With Mushroom Sauce

  1. Preheat oven to 350°F (175°C).
  2. Cut 1.5 lbs salmon fillet into 4 equal portions (approximately 6 oz each).
  3. Lightly butter a 13x9 inch baking dish.
  4. Place salmon portions in the prepared baking dish.
  5. In a large skillet, melt 2 tablespoons butter over medium heat. Add 8 oz sliced cremini mushrooms and 2 chopped green onions.
  6. Sauté for 5-7 minutes, or until mushrooms are tender and slightly browned.
  7. Stir in 2 tablespoons all-purpose flour and 1 tablespoon chopped fresh parsley. Cook for 1 minute, stirring constantly.
  8. Gradually whisk in 1 cup milk, stirring until smooth and thickened.
  9. Stir in 1/4 cup dry white wine (or water) and 1 tablespoon lemon juice. Bring to a simmer and cook for 1 minute, or until sauce has slightly thickened.
  10. Season sauce with salt and pepper to taste.
  11. Pour the mushroom sauce evenly over the salmon fillets.
  12. Bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  13. Garnish with extra fresh parsley and serve immediately with lemon wedges.
