How to Make Baked Salmon With Mushroom Sauce
- Preheat oven to 350°F (175°C).
- Cut 1.5 lbs salmon fillet into 4 equal portions (approximately 6 oz each).
- Lightly butter a 13x9 inch baking dish.
- Place salmon portions in the prepared baking dish.
- In a large skillet, melt 2 tablespoons butter over medium heat. Add 8 oz sliced cremini mushrooms and 2 chopped green onions.
- Sauté for 5-7 minutes, or until mushrooms are tender and slightly browned.
- Stir in 2 tablespoons all-purpose flour and 1 tablespoon chopped fresh parsley. Cook for 1 minute, stirring constantly.
- Gradually whisk in 1 cup milk, stirring until smooth and thickened.
- Stir in 1/4 cup dry white wine (or water) and 1 tablespoon lemon juice. Bring to a simmer and cook for 1 minute, or until sauce has slightly thickened.
- Season sauce with salt and pepper to taste.
- Pour the mushroom sauce evenly over the salmon fillets.
- Bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with extra fresh parsley and serve immediately with lemon wedges.
