How to Make Baked Tofu With Mushroom Gravy
- Preheat oven to 425°F (220°C).
- Press 1 block (14 oz) extra-firm tofu to remove excess water. Cut into 4 thick slices.
- Lightly coat tofu slices with 1 tablespoon olive oil. Sprinkle with 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon dried thyme.
- Place tofu slices on a baking sheet lined with parchment paper. Bake for 20 minutes.
- Flip tofu slices and bake for another 15 minutes, or until golden brown and crispy.
- While tofu bakes, melt 2 tablespoons butter in a medium skillet over medium-low heat.
- Add 1 medium onion, chopped, and 8 oz cremini mushrooms, sliced, to the skillet. Sauté for 10 minutes, or until softened. Do not brown.
- 5 minutes before the tofu is finished baking, whisk in 2 tablespoons all-purpose flour and cook for 1-2 minutes.
- Gradually whisk in 1 cup milk and 1/2 cup plain yogurt. Bring to a simmer over medium heat, stirring constantly.
- Reduce heat to low and simmer for 2-3 minutes, or until gravy slightly thickens. Season with salt, pepper, and thyme to taste.
- Spoon mushroom gravy generously over baked tofu slices.
- Serve immediately with roasted potatoes (cubed potatoes tossed with olive oil, salt, and pepper, roasted alongside the tofu) and your favorite steamed vegetables, such as green beans or broccoli.
