How to Make Balsamic Chicken With Pears
- Pat 2 boneless, skinless chicken breasts dry with paper towels. Place each breast between two sheets of plastic wrap.
- Using a meat mallet, gently pound each chicken breast to 1/2-inch thickness.
- Season both sides of each chicken breast with salt and pepper.
- Heat 1 tablespoon olive oil in a large frying pan over medium-high heat.
- Add chicken breasts to the pan and sauté for 3-4 minutes per side, until golden brown. Remove from pan and set aside.

- Reduce heat to medium, and simmer for 10 minutes, or until a meat thermometer inserted into the thickest part of the chicken registers 165°F (74°C).
- Taste and adjust seasoning with salt and pepper as needed.
- Remove chicken from the pan and place on serving plates.
- Spoon the pear and cherry mixture over the chicken.
- Drizzle remaining sauce over the chicken and fruit.
- Serve immediately.
