- 1 cup water
- 1 teaspoon coconut extract
- 1 medium banana, peeled and sliced

How to Make Banana And Coconut Oatmeal
- Combine 1/2 cup rolled oats and 1 cup water in a small saucepan. Bring to a boil, then reduce heat and simmer for 5-7 minutes, or until desired consistency is reached.
- While the oats are cooking, peel and slice one banana. Mash half of the banana with a fork in a small bowl.
- Once the oats are cooked, stir in the mashed banana and 1 teaspoon of coconut extract.
- Add 1-2 tablespoons of sugar or a sugar substitute, to taste.
- Top the oatmeal with the remaining sliced banana, 2 tablespoons of unsweetened shredded coconut, and 1 tablespoon of chopped walnuts (optional).
