How to Make Basque Style Potatoes

  1. Heat 2 tablespoons of olive oil in a large, heavy-bottomed skillet over medium heat.
  2. Add 1/2 cup chopped onion and 2 cloves minced garlic. Cook, stirring occasionally, until softened, about 5 minutes.
  3. Add 1 red pimento pepper, finely chopped, and 1/2 teaspoon smoked paprika. Stir to combine and cook for 1 minute more.
  4. Add 1 pound small red potatoes, quartered; 1/2 cup chicken broth; and 1/4 teaspoon salt. Stir to coat.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until potatoes are tender and the liquid has reduced slightly. Stir occasionally to prevent sticking.
