How to Make Barbara S Chinese Noodle Salad
- Cook 8 ounces of pasta according to package directions. Drain well and rinse with cold water to cool quickly.
- While pasta cooks, prepare the dressing: In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons rice vinegar, 2 tablespoons sesame oil, 1 tablespoon sugar, and 1 teaspoon grated ginger until the sugar is completely dissolved.
- Add the cooked and cooled pasta to a large bowl. Pour the dressing over the noodles and gently toss with your hands until evenly coated.
- Cover the bowl and refrigerate for at least 2 hours, or preferably longer, stirring occasionally to allow the flavors to meld and the noodles to absorb the dressing.
- Before serving, add 1/4 cup chopped carrots, 2 tablespoons chopped green onions, and 1 tablespoon sesame seeds. Gently toss to combine.
