  • Cooking Sherry
  • Garlic Powder
  • Boneless Skinless Chicken
  • 1 tablespoon vegetable oil
  • Broccoli Florets
  • 1/2 cup sliced carrots
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce (in addition to the 1/4 cup used in marinade)
  • 2 tablespoons hoisin sauce (in addition to the 2 tablespoons used in marinade)
  • Ground Ginger
  • Salted Cashews
  • Cooked Rice

How to Make Amazing Cashew Chicken

  1. In a large bowl, whisk together 1/4 cup soy sauce, 2 tablespoons hoisin sauce, 1 tablespoon grated ginger, and 1 clove minced garlic.
  2. Add 1 lb boneless, skinless chicken breasts (cut into 1-inch pieces) to the bowl and toss to coat thoroughly.
  3. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours).
  4. Remove chicken from marinade, reserving the marinade.
  5. Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat.
  6. Add chicken and stir-fry for 2-3 minutes, or until no longer pink.
  7. Remove chicken from skillet with a slotted spoon and set aside.
