How to Make Shrimp Prawn San Choy Bau

  1. Wash and separate 1 large head of butter lettuce leaves.
  2. Thoroughly dry lettuce leaves with paper towels.
  3. In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1 tablespoon lime juice. Set aside.
  4. If using large shrimp (about 1 pound), peel and devein them, then cut into bite-sized pieces.
  5. Heat 1 tablespoon vegetable oil and 1 teaspoon sesame oil in a wok or large skillet over high heat.
  6. Add 2 chopped scallions (white and light green parts), 2 minced cloves garlic, and 1 inch minced ginger. Stir-fry for 30 seconds.
  7. Add 1 pound shrimp/prawns, 1/2 cup water chestnuts (sliced), and 1-2 red chilies (finely chopped, adjust to taste). Season with 1/2 teaspoon salt and freshly ground black pepper. Stir-fry for 2 minutes.
  8. Add 1 cup cooked rice, 1/2 cup bean sprouts, and 1/4 cup chopped cilantro. Stir until combined.
  9. Pour in the reserved stir-fry sauce and toss briefly. Remove from heat.
  10. Transfer the mixture to a serving bowl.
  11. Arrange the lettuce cups on a platter.
  12. Fill the lettuce cups with the shrimp mixture.
  13. Serve immediately with hoisin sauce for drizzling.
