How to Make Shrimp Prawn San Choy Bau
- Wash and separate 1 large head of butter lettuce leaves.
- Thoroughly dry lettuce leaves with paper towels.
- In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1 tablespoon lime juice. Set aside.
- If using large shrimp (about 1 pound), peel and devein them, then cut into bite-sized pieces.
- Heat 1 tablespoon vegetable oil and 1 teaspoon sesame oil in a wok or large skillet over high heat.
- Add 2 chopped scallions (white and light green parts), 2 minced cloves garlic, and 1 inch minced ginger. Stir-fry for 30 seconds.
- Add 1 pound shrimp/prawns, 1/2 cup water chestnuts (sliced), and 1-2 red chilies (finely chopped, adjust to taste). Season with 1/2 teaspoon salt and freshly ground black pepper. Stir-fry for 2 minutes.
- Add 1 cup cooked rice, 1/2 cup bean sprouts, and 1/4 cup chopped cilantro. Stir until combined.
- Pour in the reserved stir-fry sauce and toss briefly. Remove from heat.
- Transfer the mixture to a serving bowl.
- Arrange the lettuce cups on a platter.
- Fill the lettuce cups with the shrimp mixture.
- Serve immediately with hoisin sauce for drizzling.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
