- All Purpose Flour
- Baking Powder
- Baking Soda
- Salt
- Butter
- 3/4 cup sour milk (made by combining 1 tbsp white vinegar or lemon juice with enough milk to make 3/4 cup)
How to Make Barbecued Biscuit
- Preheat your grill to high heat.
- In a medium bowl, combine 2 cups all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1 teaspoon salt.
- Cut in 1/2 cup (1 stick) cold butter or margarine using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a separate liquid measuring cup, whisk together 1 tablespoon white vinegar or lemon juice and enough milk to reach 3/4 cup total.
- Add the sour milk mixture to the dry ingredients and stir until just moistened (don't overmix!).
- Turn the dough out onto a lightly floured surface and knead gently 8-10 times.
- Flatten the dough into a 3/4-inch thick disc.
- Place the dough on a single sheet of greased heavy-duty aluminum foil. Do not enclose the foil.
- Place the foil-covered dough on one side of the preheated grill. Turn the burner under the foil OFF, and reduce the opposite burner to medium heat.
- Close the grill lid and cook for 15-18 minutes, rotating the foil halfway through, until the biscuits are lightly golden brown.
- Remove from grill and let cool slightly before cutting into 8 wedges.
- Serve warm and enjoy!
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
