How to Make Barbecued Ribs

  1. Preheat oven to 300°F (150°C). Place ribs on a rack in a shallow roasting pan.
  2. Scatter 4 cloves of sliced garlic evenly over the ribs.
  3. Cover the roasting pan tightly with foil.
  4. Bake for 3 hours.
  5. Remove from oven and let cool slightly.
  6. In a small bowl, prepare the dry rub: Mix together 1/4 cup white sugar, 2 tablespoons paprika, 1 tablespoon salt, 1 tablespoon black pepper, 1 tablespoon chili powder, and 1 tablespoon ground cumin.
  7. Generously rub the spice mixture all over the cooled ribs.
  8. Cover the ribs and refrigerate overnight (or for at least 4 hours).
  9. Next day, prepare the BBQ sauce: In a small saucepan, combine 1 cup brown sugar, 1/2 cup cider vinegar, 1/2 cup molasses, 1 cup ketchup, 1/2 cup chili sauce, 1/4 cup Worcestershire sauce, 2 tablespoons lemon juice, 1/2 cup chopped onion, 1 tablespoon dry mustard, and 1 clove crushed garlic.
  10. Simmer over medium-low heat, uncovered, for 1 hour, stirring occasionally, until thickened.
  11. Remove from heat. Reserve about 1/2 cup of sauce for basting. Use the remaining sauce as a dipping sauce.
  12. Preheat grill to medium heat.
  13. Place ribs on the preheated grill.
  14. Grill, covered, for about 12 minutes, basting frequently with the reserved sauce until nicely browned and glazed. Internal temperature should reach 190-203°F (88-95°C).
  15. Serve immediately with the remaining BBQ sauce for dipping. Enjoy!
