How to Make Barbeque Tofu Po Boys
- Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Press 14 oz firm or extra-firm tofu gently with paper towels to remove excess water. Slice into 8 equal pieces.
- Arrange tofu in the prepared baking dish. Brush generously with ½ cup BBQ sauce.
- Bake for 30 minutes, or until the tofu is firm and lightly browned.
- While the tofu bakes, prepare the caramelized onions: Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add 2 medium yellow onions, thinly sliced, and a pinch of salt. Cook, stirring occasionally, until onions begin to brown (6-7 minutes).
- Reduce heat to low, cover the skillet, and continue cooking, stirring occasionally, until onions are deeply caramelized and meltingly tender (about 10-15 minutes more).
- Stir in ½ teaspoon Cajun seasoning.
- During the last 10 minutes of tofu baking, wrap 8 po'boy rolls in foil and heat them in the oven alongside the tofu.
- Once the tofu and rolls are ready, open the rolls and spread each with 1 tablespoon vegan mayonnaise.
- Fill each roll with baked tofu, caramelized onions, 2 cups shredded lettuce, 1 cup sliced tomatoes, and pickles (optional).
