Ingredients for Bbq Bacon Cheddar Meatloaf Cupcake Mashed Potato Frosting

  • 4 slices bacon
  • 1/2 cup chopped onion
  • Ground Turkey
  • 1 cup breadcrumbs
  • 1 cup shredded cheddar cheese
  • Barbecue Sauce
  • 1 large egg
  • Yukon Gold Potatoes
  • 1/2 cup heavy whipping cream
  • Sour Cream
  • 2 tablespoons butter
  • Kosher Salt
  • Fresh Ground Black Pepper

How to Make Bbq Bacon Cheddar Meatloaf Cupcake Mashed Potato Frosting

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well with cooking spray.
  2. Cook 4 slices bacon until crisp. Remove from pan, place on paper towels to cool, then crumble into pieces.
  3. In the same skillet, sauté 1/2 cup chopped onion in the bacon grease over medium heat for 3-4 minutes until softened.
  4. In a large bowl, combine 1 lb ground turkey, 1 cup breadcrumbs, 1 cup shredded cheddar cheese, 1/2 cup BBQ sauce, 1 large egg, the cooked and crumbled bacon, and the sautéed onions. Mix well to combine.
  5. Spoon the meat mixture evenly into the prepared muffin cups, filling each about 2/3 full.
  6. Bake for 20-25 minutes, or until the meatloaf cupcakes are cooked through and no longer pink inside.
  7. Let stand for 5 minutes before removing from the muffin tin.
  8. While the meatloaf is baking, prepare the mashed potatoes:
  9. Peel and chop 2 lbs potatoes. Place in a saucepan and cover with cold water. Add a pinch of salt.
  10. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until potatoes are tender.
  11. Drain the potatoes well. Use a potato ricer for the smoothest texture (optional).
  12. Return the potatoes to the saucepan. Stir in 1/2 cup heavy whipping cream, 2 tablespoons butter, and salt and pepper to taste.
  13. Mash until smooth and creamy. If needed, add more cream or milk, 1 tablespoon at a time, until desired consistency is reached. The potatoes should be thick enough to pipe.
  14. Transfer the mashed potatoes to a piping bag fitted with a large star tip.
  15. Pipe the mashed potato frosting generously onto the cooled meatloaf cupcakes.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
