Ingredients for Bbq Chicken And Veggies

  • Boneless Skinless Chicken Breasts
  • Red Pepper
  • White Onion
  • Yellow Squash
  • Cilantro
  • 1/2 cup low-sugar BBQ sauce
  • 1 1/2 tsp sea salt (divided use)
  • 5/8 tsp black pepper (divided use)

How to Make Bbq Chicken And Veggies

  1. Preheat oven to 400°F (200°C). Line a large baking pan or casserole dish with heavy-duty foil for easy cleanup.
  2. Season 2 lbs boneless, skinless chicken breasts generously with 1 tsp sea salt and 1/2 tsp black pepper.
  3. In a large bowl, toss 1 lb assorted colorful vegetables (such as bell peppers, broccoli florets, zucchini, and red onion), cut into bite-sized pieces, with 1/2 tsp sea salt and 1/4 tsp black pepper.
  4. Arrange the seasoned vegetables in the prepared baking pan. Place the chicken breasts on top of the vegetables.
  5. Drizzle 1/2 cup of your favorite low-sugar BBQ sauce evenly over the chicken and vegetables.
  6. Bake for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (74°C).
  7. Let rest for 5 minutes before serving. Enjoy!

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
