  • 8 cups water
  • Low Sodium Beef Broth
  • 1/4 cup rice vinegar
  • Low Sodium Soy Sauce
  • 1/4 cup brown sugar
  • Ground Cinnamon
  • 2 tablespoons vegetable oil
  • Beef Stew Meat
  • 4 green onions, chopped
  • 4 cloves garlic, minced
  • Fresh Ginger
  • 1 lb bok choy, chopped
  • 1 cup carrots, sliced
  • Wide Rice Noodles

How to Make Beef And Bok Choy Hot Pot

  1. In a large bowl, whisk together 8 cups water, 2 cups beef broth, 1/4 cup rice vinegar, 1/2 cup soy sauce, 1/4 cup brown sugar, and 1 cinnamon stick.
  2. Set aside.
  3. Heat 2 tablespoons vegetable oil in a large pot or Dutch oven over medium-high heat.
  4. Add 2 lbs beef stew meat, browning on all sides. Remove beef from the pot and set aside.
  5. Add 4 green onions (chopped), 4 cloves garlic (minced), and 1 inch ginger (grated) to the pot. Sauté for 1 minute until fragrant.
  6. Pour in the broth mixture. Add the browned beef back to the pot.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour and 30 minutes, or until beef is very tender.
  8. Add 1 lb bok choy (chopped) and 1 cup carrots (sliced).
  9. Cook for 5-7 minutes, or until bok choy and carrots are tender-crisp.
  10. Serve the beef and vegetable mixture over hot rice noodles. Garnish with extra green onions, if desired.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
