How to Make Beef Barley Skillet
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of beef stew meat, cut into 1-inch cubes, and brown on all sides.
- Add 1 large onion, chopped; 2 carrots, chopped; and 2 celery stalks, chopped. Cook until softened, about 5-7 minutes.
- Stir in 1 cup of barley, 4 cups of beef broth, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
