How to Make South African Stir Fry
- Heat 2 tablespoons of canola oil in a large skillet or wok over medium-high heat.
- Add 1 large chopped onion and 4 minced cloves of garlic. Sauté until lightly browned, about 5 minutes.
- Add 1 chopped bell pepper and 1 (28 ounce) can of crushed tomatoes.
- Cook for 5 minutes, stirring frequently.
- Reduce heat to medium.
- Add 1 lb of bite-sized chicken (or substitute protein), 2 tablespoons of curry powder, and 1/2 teaspoon of ground nutmeg. Cook for 15 minutes, stirring occasionally.
- Add 1 cup of water and 1 ½ cups of long-grain rice.
- Stir well to combine, then cover the skillet.
- Cook over medium heat for 40-50 minutes, or until the rice is tender and the liquid is absorbed, adding more water as needed to prevent sticking.
- Serve hot, as is or with tortillas on the side.
