Ingredients for Beef Tips

  • Rump Roast
  • Cream Of Mushroom Soup
  • Mushrooms
  • Lipton Onion Soup Mix
  • Salt And Black Pepper
  • Bay Leaf
  • Water
  • 2 tablespoons oil

How to Make Beef Tips

  1. Trim 1.5 lbs beef roast and cut into 1-inch bite-sized chunks.
  2. In a large pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Brown the beef in batches, ensuring all sides are seared. Remove the browned beef and set aside.
  3. Add 1 large onion (chopped), 2 cloves garlic (minced), and 1 green bell pepper (chopped) to the pot. Cook until softened, about 5 minutes.
  4. Return the beef to the pot. Add 1 (14.5 ounce) can of diced tomatoes, 1 cup beef broth, 1 teaspoon dried thyme, 1 bay leaf, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour and 30 minutes, or until the beef is tender but not falling apart.
  6. In a small bowl, whisk together 2 tablespoons of all-purpose flour and 1/4 cup of cold water until smooth.
  7. Slowly whisk the flour mixture into the simmering beef tips. Cook for another 5 minutes, or until the sauce has thickened to your desired consistency.
  8. Remove the bay leaf before serving. Serve the beef tips over rice, mashed potatoes, or egg noodles.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
