How to Make Beef Tips
- Trim 1.5 lbs beef roast and cut into 1-inch bite-sized chunks.
- In a large pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Brown the beef in batches, ensuring all sides are seared. Remove the browned beef and set aside.
- Add 1 large onion (chopped), 2 cloves garlic (minced), and 1 green bell pepper (chopped) to the pot. Cook until softened, about 5 minutes.
- Return the beef to the pot. Add 1 (14.5 ounce) can of diced tomatoes, 1 cup beef broth, 1 teaspoon dried thyme, 1 bay leaf, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour and 30 minutes, or until the beef is tender but not falling apart.
- In a small bowl, whisk together 2 tablespoons of all-purpose flour and 1/4 cup of cold water until smooth.
- Slowly whisk the flour mixture into the simmering beef tips. Cook for another 5 minutes, or until the sauce has thickened to your desired consistency.
- Remove the bay leaf before serving. Serve the beef tips over rice, mashed potatoes, or egg noodles.
