How to Make Beefy Tamale Pie
- Preheat oven to 450°F (232°C).
- Spray a 12x8-inch baking dish with no-stick cooking spray.
- In a large skillet, cook 1 lb ground beef until browned, breaking it up with a spoon.
- Drain off any excess grease.
- In a large bowl, combine the cooked ground beef, 1 cup shredded cheddar cheese, 1 box (8.5 oz) corn muffin mix, 2 large eggs, 1 (14.5 oz) can diced tomatoes, undrained, 1 (15 oz) can whole kernel corn, drained, 1 tbsp chili powder, and 1/2 cup water.
- Mix until all ingredients are well combined.
- Pour the mixture into the prepared baking dish.
- Bake for 20 minutes.
- Sprinkle 1/2 cup shredded cheddar cheese over the top.
