How to Make Beefy Vegetable Bake
- Preheat oven to 375°F (190°C).
- In a large bowl, mix together 1 tbsp dried thyme, 1 tsp salt, and 1/2 tsp black pepper.
- Layer half of the chopped vegetables (see ingredients list for quantities) in a 3-quart casserole dish.
- Crumble 1 lb of uncooked ground beef evenly over the vegetables.
- Sprinkle half of the thyme mixture over the ground beef.
- Repeat layers with the remaining vegetables, ground beef, and thyme mixture.
- Top with 1 (28 ounce) can of diced tomatoes, undrained.
- Cover the casserole dish with a lid or aluminum foil.
- Bake for 1 hour and 15 minutes, or until the beef is cooked through and the vegetables are tender. (Internal temperature of the beef should reach 160°F (71°C)).
- If desired, sprinkle 1/2 cup shredded cheddar cheese over the top during the last 5-10 minutes of baking, allowing it to melt.
