How to Make Beer Soup
- Melt 2 tablespoons of butter in a large saucepan over medium heat. Add 1 cup of chopped shallots and 2 cloves of minced garlic. Cook until softened, about 5 minutes.
- Add 1 (12-ounce) bottle of beer, 4 cups of chicken broth, 1 cup of chopped carrots, 1 cup of chopped celery, 1 bay leaf, 1 teaspoon of dried thyme, and ½ teaspoon of black pepper. Stir well to combine.
- Bring the mixture to a simmer, then reduce heat to low. Cover and cook for 20 minutes, allowing the flavors to meld.
- Remove the bay leaf.
- Carefully transfer the soup to a blender (or use an immersion blender) and puree until smooth and creamy.
- Return the soup to the saucepan. Season with salt and pepper to taste. Garnish with fresh parsley or chives (optional).
