How to Make Berry Boy Bait
- Preheat oven to 350°F (175°C). Grease and flour a 13x9 inch baking pan.
- In a medium bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt.
- In a large bowl, cream together 1 cup (2 sticks) unsalted butter and 1 1/2 cups granulated sugar using an electric mixer until light and fluffy (about 2 minutes).
- Beat in 2 large eggs, one at a time, mixing well after each addition.
- Reduce mixer speed to medium. Gradually add the dry ingredients to the wet ingredients, alternating with 1 cup milk, beginning and ending with the dry ingredients. Mix until just combined.
- In a small bowl, toss 1/2 cup of your favorite berries with 1 teaspoon of flour.
- Gently fold the floured berries into the batter using a rubber spatula.
- Pour the batter into the prepared pan and spread evenly.
- Scatter another 1/2 cup of berries over the top of the batter.
- In a small bowl, combine 1/4 cup granulated sugar and 1/4 teaspoon ground cinnamon. Sprinkle evenly over the berries.
- Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 20 minutes before inverting it onto a wire rack to cool completely.
