How to Make Bacon Wrapped Shrimp With Chipotle Barbecue Sauce

  1. Soak 5 to 8 bamboo skewers in water for at least 20 minutes.
  2. Cook bacon in a large skillet over medium heat until halfway cooked, about 4 minutes per side. Remove bacon and drain on paper towels; set aside to cool slightly.
  3. Wrap a piece of bacon around the middle of each shrimp.
  4. Secure each bacon-wrapped shrimp onto a skewer, threading the skewer through the bacon to hold it in place. Thread 3-5 shrimp onto each skewer.
  5. In a blender, combine barbecue sauce, olive oil, lemon juice, Dijon mustard, minced chipotle peppers, adobo sauce, red pepper flakes, cayenne pepper (if using), and black pepper. Blend until smooth.
  6. Set aside about half of the chipotle barbecue sauce for dipping.
  7. Preheat grill, grill pan, or broiler to medium-high heat.
  8. Grill or broil shrimp skewers for 5 minutes, basting once with the chipotle barbecue sauce when they begin to turn pink.
  9. Flip skewers, baste again, and grill or broil for another 4 minutes, or until shrimp are cooked through and bacon is crispy.
  10. Serve immediately with extra chipotle barbecue sauce for dipping.
