Ingredients for Berry Lemon Sparklers

  • Raspberries
  • 2 tablespoons granulated sugar
  • 1/4 cup fresh lemon juice
  • Ice
  • Seltzer Water
  • Mint Sprig

How to Make Berry Lemon Sparklers

  1. In a medium bowl, mash 1/12 pint (approximately 1/2 cup) of mixed berries with 2 tablespoons of granulated sugar.
  2. Let the mixture stand for 10 minutes to allow the berries to release their juices.
  3. Stir in 1/2 cup of water. Then, strain the mixture into a large pitcher, using a spoon to press and extract as much juice as possible from the berries. Discard the solids.
  4. Stir in 1/4 cup of fresh lemon juice and 2 1/2 cups of water.
  5. Fill eight 8-ounce pint glasses halfway with ice.
  6. Pour approximately 3/4 cup of the berry-lemon mixture into each glass.
  7. Top each glass with a splash of seltzer or club soda.
  8. Gently stir to combine. Garnish with fresh berries and a sprig of mint for an extra touch of elegance.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
