Ingredients for Cinnamon Apple Coffee Cake

  • 6 medium apples, peeled, cored, and thinly sliced
  • 2 1/2 cups granulated sugar
  • 2 tablespoons ground cinnamon
  • 3 large eggs
  • 1/2 cup fresh orange juice
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 3 cups all-purpose flour

How to Make Cinnamon Apple Coffee Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 10-inch tube pan.
  2. In a large bowl, toss the sliced apples with 1/2 cup of the granulated sugar and 1 tablespoon of the cinnamon.
  3. Set aside.
  4. In a separate large bowl, whisk together the eggs and orange juice.
  5. Gradually add the vegetable oil and remaining 2 cups of sugar while beating until smooth.
  6. In a separate bowl, whisk together the vanilla extract, baking powder, and flour.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  8. Layer half of the batter into the prepared tube pan. Top with half of the apple mixture.
  9. Repeat with remaining batter and apples.
  10. Sprinkle the remaining 1 tablespoon of cinnamon over the top.
  11. Bake for 1 hour and 15 minutes to 1 hour and 30 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
