How to Make Couscous Chickpea Salad With Ginger Lime Dressing

  1. Bring 1 cup of water to a boil in a medium saucepan.
  2. While water heats, peel and seed 1 medium cucumber, then dice it.
  3. Add 1 cup couscous, 1/4 cup raisins (or dried cranberries), and 1/4 teaspoon turmeric (optional) to the boiling water. Stir, cover, remove from heat, and let stand for 5 minutes.
  4. Meanwhile, finely chop 1/2 cup cucumber, 1/2 cup cherry or grape tomatoes, and 1/4 cup red onion.
  5. Fluff the couscous with a fork and gently stir in the chopped cucumber, tomatoes, red onion, and 1/4 cup fresh mint leaves.
  6. Drain and rinse 1 (15-ounce) can of chickpeas. Add them to the couscous mixture.
  7. In a large bowl, whisk together 1/4 cup fresh lime juice, 1/4 cup olive oil, 1 tablespoon grated fresh ginger, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  8. Add the couscous mixture to the dressing and toss gently to coat.
  9. Refrigerate for at least 1 hour to allow the flavors to meld before serving.
  10. Serve chilled and enjoy!
