How to Make Dama Be Potaatas

  1. Chop 1 large onion and sauté in 2 tablespoons of oil in a large pot over medium heat until softened (about 5 minutes).
  2. Cover the pot and cook, stirring occasionally, for another 5 minutes.
  3. Add 1 cup of water, cover, and simmer over medium heat for 5-10 minutes, or until most of the water has evaporated.
  4. Lightly blend the onions using an immersion blender or in a food processor. Return the blended onions to the pot.
  5. Add 2 cups chopped tomatoes to the pot.
  6. Peel and chop 2 pounds of potatoes into 1-inch cubes. Fry the potatoes in 2 tablespoons of oil until golden brown.
  7. Chop 1 pound of steak into small 1/2-inch pieces. Add the steak to the pot along with 1/2 cup chopped green bell pepper, 1 teaspoon salt, 1/2 teaspoon ground cardamom, and 1/4 teaspoon ground cinnamon.
  8. Cover and cook for 3 minutes.
  9. Stir in 2 tablespoons of tomato paste. Add water, 1/4 cup at a time, until the sauce reaches your desired consistency.
  10. Add the fried potatoes to the pot. Cover and simmer for 10-15 minutes, adding more water if needed, until the potatoes are tender and the sauce has thickened.
  11. Stir in 2 cloves of crushed garlic just before serving.
