How to Make Danish Apple Pancakes
- Preheat oven to 200°C (390°F).
- Sift 150g all-purpose flour and 2 tsp baking powder into a large bowl. Add 1 tbsp caster sugar.
- In a separate bowl, whisk together 2 large eggs and 200ml milk.
- Gradually whisk the wet ingredients into the dry ingredients until a smooth batter forms.
- Heat a 22cm oven-safe skillet or frying pan over medium heat. Add 20g butter and heat until it begins to foam.
- Add 2 medium apples (peeled, cored, and thinly sliced), 1 tsp ground cinnamon, and 1 tbsp caster sugar to the pan. Toss gently to coat and cook for 2-3 minutes until the apples soften slightly.
- Remove half of the apple mixture from the pan and set aside.
- Pour half of the batter over the remaining apples in the pan.
- Bake in the preheated oven for 4-5 minutes, or until the pancake is golden brown and cooked through.
- Repeat steps 7-8 with the remaining apple mixture and batter.
- Serve immediately, dusted with icing sugar and drizzled with whipped cream or crème fraîche.
