How to Make Autumn Apple Muffins

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, cream together 1/2 cup (113g) softened butter and 3/4 cup (150g) granulated sugar until light and fluffy.
  3. Beat in 1 large egg, then stir in 1 cup (240ml) plain yogurt and 1/2 cup (120ml) milk.
  4. Add 1 cup (120g) rolled oats, 1/2 cup (60g) wheat bran, 2 cups (250g) peeled and diced apples, and 1/2 cup (60g) dried fruit (raisins, cranberries, or a mix).
  5. In a separate bowl, whisk together 2 cups (240g) all-purpose flour, 2 teaspoons baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  7. Fill muffin cups about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
