How to Make Easy Baked Salmon With Arugula

  1. Preheat oven to 390°F (199°C).
  2. Place 1 lb salmon fillet in a baking dish.
  3. Season generously with salt and freshly ground black pepper.
  4. Add 1/2 medium yellow onion, thinly sliced, 2 bay leaves, 1/4 cup dry white wine, 1 tablespoon olive oil, and enough hot water to almost cover the salmon.
  5. Cover the baking dish tightly with aluminum foil.
  6. Bake for 30 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. While the salmon bakes, prepare 4 cups of arugula by washing and drying it thoroughly.
  8. Carefully remove the salmon from the oven and let it rest for 5 minutes.
  9. Place the arugula on a serving plate. Gently place the baked salmon on top of the arugula.
  10. Serve immediately and enjoy!
