How to Make Garden Soup With Chicken

  1. Dice 1 lb boneless, skinless chicken breasts into 1-inch pieces.
  2. Melt 2 tablespoons butter in a large enameled pot over medium heat.
  3. Season chicken with 1 tsp salt and 1/2 tsp black pepper. Brown chicken in the pot until golden brown (about 5-7 minutes).
  4. Remove chicken from pot and set aside. Add 1 large onion (chopped), 2 celery stalks (chopped), 1 green bell pepper (chopped), 2 tablespoons butter, and 1/2 cup chicken broth to the pot.
  5. Scrape the bottom of the pot to loosen the browned bits from the chicken.
  6. Sauté vegetables until softened and golden brown (about 8-10 minutes). The broth will evaporate.
  7. Add 2 cups shelled fresh lima beans, 2 medium potatoes (diced), 1 (14.5 ounce) can diced tomatoes (undrained), and the cooked chicken back to the pot.
  8. In a small bowl, whisk together 2 tablespoons tomato paste with 1/2 cup chicken broth until smooth. Pour into the pot.
  9. Add 1 tsp dried oregano, 1/2 tsp dried basil, salt and pepper to taste, and enough chicken broth to cover the vegetables and chicken (about 4-6 cups).
  10. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until potatoes and beans are tender.
  11. Taste and adjust seasonings as needed before serving. Garnish with fresh herbs if desired.
