How to Make Go Go Greek Tilapia

  1. Preheat oven to 450°F (232°C).
  2. In a glass baking dish, squeeze the juice of one lemon and add 2 tablespoons of olive oil. Whisk to combine.
  3. Place the tilapia fillets in the baking dish and brush the lemon-olive oil mixture on both sides.
  4. Season both sides of the fillets generously with salt and pepper.
  5. In a separate bowl, gently combine the chopped spinach, Greek yogurt (or sour cream), and feta cheese.
  6. Place large spoonfuls (about 1/4 cup) of the spinach mixture in the center of each tilapia fillet.
  7. Carefully roll up each fillet and secure with a toothpick.
  8. Arrange the rolled fillets in the baking dish, tucking any remaining spinach mixture between and on top of the fillets.
  9. Squeeze the juice of the second lemon over the rolled fillets.
  10. If using, sprinkle with fresh dill or oregano.
  11. Bake uncovered for 20 minutes, or until the tilapia is cooked through and flakes easily with a fork.
