How to Make Green Chili
- Heat 2 tablespoons of olive oil in a large (6-quart) pot or Dutch oven over medium heat.
- Add 2 cloves of minced garlic and sauté until golden brown (about 1 minute).
- Add 1 medium chopped onion (about 1 cup) and sauté until translucent (about 5 minutes).
- Add 1.5 lbs of pork, cut into 1-inch cubes. Season generously with salt and pepper.
- Cook over medium-high heat, stirring occasionally, until the pork is browned (about 8-10 minutes).
- Stir in 2 teaspoons of ground cumin. Reduce heat to medium and cook until the pork is cooked through (about 10-15 minutes).
- Add all remaining ingredients (see ingredient list below).
- Bring to a boil, then reduce heat to low, cover, and simmer for at least 1 hour, or up to 3 hours, for a thicker chili. Stir occasionally.
- Serve hot, garnished with grated Colby-Jack cheese, a dollop of sour cream, chopped green onions or cilantro, and tortilla chips.
