How to Make Half Time Chili

  1. Dice 1 lb pork sirloin into 1-inch cubes. Finely chop 1 large onion and 1 green bell pepper.
  2. In a large pot or Dutch oven, brown the pork sirloin cubes over medium-high heat. Remove from the pot and set aside.
  3. Add 1 lb ground pork to the pot and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Add the chopped onion and green pepper to the pot and cook until softened, about 5 minutes.
  5. Stir in 2 cloves minced garlic, 1 tbsp chili powder, 1 tsp cumin, 1 tsp oregano, 1/2 tsp cayenne pepper (optional), and 1/2 tsp salt.
  6. Return the browned pork sirloin to the pot. Add 28 oz (1 can) crushed tomatoes, 15 oz (1 can) kidney beans (drained and rinsed), 15 oz (1 can) pinto beans (drained and rinsed), 15 oz (1 can) diced tomatoes (undrained), and 4 cups beef broth.
  7. Bring the chili to a boil, then reduce heat to low, cover, and simmer for 2 hours, stirring occasionally.
  8. After 2 hours, add additional chili powder and/or hot sauce to taste.
  9. Continue simmering uncovered on low heat for 1 hour, or until the chili has thickened to your desired consistency.
