How to Make Healthy Cowboy Cookies

  1. Preheat oven to 325°F (160°C).
  2. Place 1/2 cup pitted dates in a bowl and cover with 1/2 cup boiling water. Let soak for 10 minutes to soften.
  3. In a large bowl, whisk together 2 cups whole wheat flour, 2 teaspoons baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon cinnamon.
  4. In a separate bowl, mash 1 (15-ounce) can of beans until completely smooth.
  5. Drain the soaked dates and blend or food process them into a thick paste.
  6. Add 1/2 cup melted unsalted butter, the date paste, 1/2 cup granulated sugar, 1/4 cup packed brown sugar, 2 large eggs, and 1 teaspoon vanilla extract to the mashed beans. Mix well after each addition.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  8. Stir in 1 cup chocolate chips, 1 cup rolled oats, 1/2 cup shredded coconut, and 1 cup pecans.
  9. Drop by rounded spoonfuls onto ungreased baking sheets. Gently flatten slightly with a spatula, as they won't spread much.
  10. Bake for 9-10 minutes, or until edges are lightly golden. Even if they look slightly underbaked, remove from oven.
  11. Let cool on baking sheets for 10 minutes before transferring to a wire rack to cool completely. Cookies will continue to bake as they cool.
  12. For frozen cookie dough, add 1-2 minutes to baking time.
