How to Make Juicy Roast Turkey

  1. Preheat oven to 325°F (160°C). Remove neck, giblets, and tail from the turkey. Remove any plastic parts.
  2. Rinse the turkey inside and out and pat completely dry with paper towels.
  3. Truss the turkey (optional).
  4. Prepare the herb rub (see ingredient list).
  5. Generously rub the herb mixture all over the turkey, including under the skin of the breast and legs.
  6. Place the turkey breast-side down on a V-shaped rack in a heavy-duty roasting pan.
  7. Roast for 1 hour.
  8. Carefully flip the turkey breast-side up using paper towels to grip the turkey.
  9. Rub the remaining herb mixture onto the breast.
  10. Continue roasting, basting with pan drippings every 30 minutes and rotating the pan occasionally for even browning. Roast until a meat thermometer inserted into the thickest part of the thigh registers 170°F (77°C) - approximately another 2-2.5 hours.
  11. Transfer the turkey to a carving board, tent loosely with foil, and let rest for 20-30 minutes before carving. Remove trussing strings before carving.
