How to Make Juicy Roast Turkey
- Preheat oven to 325°F (160°C). Remove neck, giblets, and tail from the turkey. Remove any plastic parts.
- Rinse the turkey inside and out and pat completely dry with paper towels.
- Truss the turkey (optional).
- Prepare the herb rub (see ingredient list).
- Generously rub the herb mixture all over the turkey, including under the skin of the breast and legs.
- Place the turkey breast-side down on a V-shaped rack in a heavy-duty roasting pan.
- Roast for 1 hour.
- Carefully flip the turkey breast-side up using paper towels to grip the turkey.
- Rub the remaining herb mixture onto the breast.
- Continue roasting, basting with pan drippings every 30 minutes and rotating the pan occasionally for even browning. Roast until a meat thermometer inserted into the thickest part of the thigh registers 170°F (77°C) - approximately another 2-2.5 hours.
- Transfer the turkey to a carving board, tent loosely with foil, and let rest for 20-30 minutes before carving. Remove trussing strings before carving.
