How to Make Mediterranean Shrimp

  1. Heat 3 tbsp olive oil in a large nonreactive skillet over medium heat.
  2. Add 2 cloves minced garlic, 1/2 cup chopped yellow onion, and 2 thinly sliced scallions. Sauté for 2 minutes, stirring frequently.
  3. Stir in 1 (14.5 ounce) can of undrained diced tomatoes. Increase heat to high and cook for 5 minutes.
