How to Make Basil Shrimp With Feta And Orzo
- Preheat oven to 450 degrees F (232 degrees C).
- Lightly spray a large sheet of heavy-duty aluminum foil with cooking spray. Place on a large baking sheet.
- Cook orzo pasta according to package directions, usually about 8-10 minutes in boiling salted water. Drain well and set aside.
- In a large bowl, combine cooked orzo, 1 teaspoon olive oil, feta cheese, sun-dried tomatoes, lemon zest, lemon juice, garlic, salt, and pepper.
- In a separate bowl, gently toss shrimp with fresh basil leaves and the remaining 1 teaspoon olive oil.
- Arrange the shrimp and basil mixture on top of the orzo mixture in the center of the prepared foil.
- Carefully fold the foil over to create a sealed packet, crimping the edges to prevent leaks.
- Bake for 25-30 minutes, or until shrimp is pink and cooked through and orzo is heated through.
- Carefully remove from oven and let stand for 5 minutes before opening.
- Cut open the foil packet with caution, using kitchen shears or a sharp knife.
