How to Make Mexican Stuffed Jalapenos
- Preheat your oven to 375°F (190°C) or prepare your grill.
- Cut the tops off 6-8 jalapenos and carefully remove the seeds and membranes. (Optional: Wear gloves to avoid burning your hands.)
- In a medium bowl, combine the following ingredients: 1 pound ground beef, 1/2 cup cooked rice, 1/2 cup shredded cheddar cheese, 1/4 cup chopped red onion, 2 tablespoons chopped cilantro, 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon garlic powder, salt and pepper to taste.
- Fill each jalapeno about halfway with the meat mixture, top with 1/2 slice of smoked Gouda cheese per jalapeno, then finish with the remaining meat mixture.
- Wrap each stuffed jalapeno with 1/2 slice of bacon and secure with a toothpick.
- Place the jalapenos on a baking sheet or grill rack. If using a jalapeno stand, place the stuffed peppers in the stand.
- Bake for 20-25 minutes, or grill for 15-20 minutes, or until the bacon is crispy and the jalapenos are tender.
- Let cool slightly before serving. Enjoy!
