How to Make Mum's Beef Or Chicken Casserole

  1. Preheat oven to 180°C (350°F).
  2. In a large bowl, toss 500g cubed beef or 450g cubed chicken with 2 tablespoons flour, salt, and pepper to taste.
  3. In a large ovenproof casserole dish, layer the meat, 1 large chopped onion, 2 tablespoons tomato sauce, 1 tablespoon Worcestershire sauce, 1 teaspoon beef stock powder (or 1 cube dissolved in 100ml water), and 250ml beef or chicken stock.
  4. Add 500g peeled and cubed potatoes, 250g peeled and sliced carrots, and 150g green beans.
  5. Cover the casserole dish and cook in the oven for 40 minutes or on the stovetop over medium-low heat for 20 minutes, stirring occasionally.
  6. Add 150g frozen peas and continue cooking in the oven for a further 20 minutes (or stovetop for 10 minutes), stirring occasionally until the vegetables are tender and the meat is cooked through.
  7. For a richer, darker gravy (optional): Stir in 1 teaspoon of Vegemite or a similar savory yeast extract.
